2018 Cabernet Sauvignon
An abundance of black fruits, spice, violets and minerals. Swirling brings up dried flowers, red currant and raspberry puree with black tea and hibiscus. The palate is open and dense at the same time conveying a sense of weightlessness. It has superfine tannins that coat the palate, with no hard edges and sweet fruit that lingers on the finish.
2018 ALLEROMB – CABERNET SAUVIGNON
Vintage:
The 2018 vintage was warm overall with ideal periods of cooling in the spring and fall. The amount of fruit was abundant and the conditions for developing some of the highest phenolic levels to date were nearly perfect. Incredible color was developed in the 2018’s leaving the wines with a plush feel and pure aromatics.
Wine:
The 2018 Cabernet Sauvignon was fermented all in concrete and includes a small amount of Malbec and Merlot. The wine was aged 32 months in a combination of 225L and 500L barrels with 40% of those being new. The wine was bottled unfined and unfiltered.
Blend: 94% Cabernet Sauvignon 4% Malbec 2% Merlot
Aging: 32 months in 35% new French oak.
AVA: Columbia Valley
Alcohol: 15.4%
