2019 ALLEROMB – CABERNET SAUVIGNON
Columbia Valley
Aging: 32 months in 81% new French oak 300L barrels.
Alcohol: 15.1%
Vintage:
The 2019 vintage started out cool with heavy snowpack from February and March that kept ground temps cool and the soils saturated with moisture. Budbreak was slightly later than normal and moisture in the soils made nutrients readily available for the spring and early summer. Big canopy growth and a large fruit set led to a substantial harvest and although there was an early freeze event, much of our production had already been harvested or was at elevations that weren’t affected.
Wine:
The Cabernet was fermented all in stainless steel and then was aged in 81% new 300L French oak barrels for 32 months. The 2019 again incorporates a small amount of Malbec to provide some aromatic lift and textural complexity. The 2019 vintage gave us wines with ripe but fresh fruit and more forward tannins than we saw in 2018 or 2020. We’ve begun to push extraction slightly on our Cabernet and 2019 was an ideal vintage for us to modify the style.
